Lemon Brownies

This is a good treat for someone that 
doesn't like chocolate.
I can't believe I just typed that sentence )
In a large bowl combine the sugar, flour
and salt. Add the softened butter.
tip:You can soften a stick if butter in the 
microwave for 25 seconds on 30% power
 Whisk the eggs in another bowl and add the lemon juice,
and zest.
Combine the two and beat until smooth.
I always use the butter wrapper to grease the pan.
Pour in the batter.
Bake at 350 for 25 minutes.
Mix the powdered sugar, lemon juice and zest.
 Spread on the cooled lemon brownies.
It will make a nice thin glaze.
Cut into squares.
These have a light yet dense texture, 
similar to brownies. I'll give them their own
new name......Lemonies!

Enjoy!
Lemon Brownies
3/4 C flour
3/4 C sugar
1/4 t salt
1 stick butter, soft
2 eggs
juice from 1/2 lemon (about 1T)
zest from 1/2 lemon (about 1t)
Combine the flour, sugar and salt
 in a large bowl.
 Mix in the softened butter.
In another bowl whisk the eggs with 
the lemon juice and zest.
Add to the larger bowl and mix well.
 Pour into prepared 8X8 brownie pan.
 Bake at 350 for 25 minutes.
You can double the recipe and bake in a
 9X13 pan for 30 minutes.
Remove and let cool, then glaze.
Glaze
1/2C powdered sugar
1 T lemon juice
additional lemon zest
stir together
~~~~~~~~~~~~~~~~~~~~~~
note: 1 stick of butter is = to 1/2 C or 1/4 pound.
I use unsalted butter.

  27. I thought this would be a wonderful recipie to try for my sweets loving family. However you do not have a Print Recipe option. While the photos are very hepful for a new cook, anyone who has been around for a bit would most likely enjoy just being able to print the actual recipe. I will spend the time to copy it long hand however as a rule I will do this only once with any blogger. After that I delete them from my list of who to follow.

    1. You could always copy the recipe and paste it into a word processing program like Microsoft Word to print (takes two right clicks). Then you could even add your own notes and pictures, if you like. No print button is not a deal breaker in my book!

  28. I would love to add a print option, but haven't found one that works for me yet. I do put the concise recipe at the bottom so that it's easy to copy and paste to a blank 'compose email' and then print. That's what I do on so many recipe blogs. Still looking for a good and easy print button for my blog.

  32. It's unfortunate someone feels the need to be obnoxious when other people are giving them free recipes. You don't have to be very computer savvy to copy and paste a recipe into a word document and hit print. In fact, I think that would take less time than bothering to write a rude comment. :-)

    These look delicious by the way. I'm one of those crazy people who doesn't like chocolate. We look forward to trying them. Love the name "lemonies!"

  33. I found your recipe on Pinterest and had to try it. I LOVE lemon. Great flavor and I like the idea that it doesn't make a huge pan (the husband doesn't like lemon). They were terrific. I agree that they are a little more dense than cake, but not exactly brownie consistency. Just the right tang. Thanks for sharing! Kim

    Self-rising flour is always listed as such.

  37. Hey there! Just came across this recipe on pinterest and it looks amazing, I can't wait to try it. I'm an overseas visitor though, so could you clarify what the abbreviations are in the recipe? What's a 'C' and a 't'? Also, when you say 3/4 C do you mean "3 or 4 Cs" or "3 fourths of a C"? Thanks a million :)

    1. C is cup or 8 fluid ounces. A standard coffee cup in Europe is close enough for most recipes. 3/4 is 3 quarters of a cup. Small t is teaspoon or 5g. Capital T is tablespoon or 15g. A stick if butter is about 100g. Hope that helps!

    My lemonies are in the oven but I have a novice baker question. I must admit I usually make brownies from a mix and have only baked cakes, cookies, and pies. My question is regarding baking powder/baking soda-I notice there is none in this recipe (and I didn't put any in) but I usually see it in baked good recipes so I was just wondering :-)

  49. I made these last week and am ashamed to say that I ate the majority of the pan all by myself!! But they are so delicious, I had a hard time feeling bad about it. I doubled the recipe and made in the 13x9 pan. After pouring the glaze on the top, I slipped them into the refridgerator to set the glaze faster. I couldn't wait to eat one! They tasted to yummy chilled, that I left them in the fridge. I think i liked them like this better than I would have at room temp. My husband is a huge chocolate brownie lover, but said these were just as good. Thank you for the recipe! It is definately going in my favorites!

Easy recipe (although I did add a touch more lemon), smells amazing as they're being baked, and they taste GREAT!   54. Hi! I just made these this morning for a family event tonight for my hubby's work and they are SO good! Even my 2 and 3 year old loved them. I used salted butter since it's all I had on hand and just didn't add extra salt. So light and refreshing! So glad I doubled the recipe so we could taste them early and still have some left to share. :)

  55. Oh my! I just made a double batch of these. I don't think they'll last long - and I'm the only one home this weekend! I love their texture, as I'm a huge brownie fan. Glad to see someone else tried other citrus versions as I was wondering about using key lime juice.

    I used dried lemon zest from a jar and bottled juice and they were still amazing!

  60. I made these last night and they turned out alright. For some reason, they tasted a bit "flour-y." I am thinking I did not mix the ingredients well enough. Next time I will mix with my kitchen aid ;) other than that, they were pretty good and the glaze was amazing! Thanks for sharing!

  61. These sound great! My husband loves lemon and he loves brownies. I on the other hand generally do not like brownies! Strange I know, I dont like chocolate ice cream either!   82. I copied what I guess is your recipe from Backy Charms...warning there is a typo or change in the glaze yours calls for 1 tablespoon of lemon juice the other one calls for 4!!! That amount causes the brownie to be way too moist and gooey! Will have to try again with your proportions.

  85. First of all, I LOVE brownies & second of all, I am obsessed with anything lemon (so this was a dream come true). I also have been looking for something to bake that was a little less rich than lemon bars but still slightly similar & these we perfect!! I ALWAYS look at reviews before baking/making any recipes that I am not familiar with & this time, I let the pictures speak for themselves! I also was looking for something to bake that was relatively easy (after slaving over dinner all night). And boy, was I in for one of the best treats of my life...I just cooled & glazed them & took a bite of a slice & I honestly felt like Julia Child for a minute haha Anyway....they are better than ANY words could do them justice for. I'm so excited for my boyfriend to try them tomorrow, along with his co-workers...I expect a text or call around lunch time (or even possibly before!). Thank you, this is the best thing I've made off of Pinterest, it will be extremely hard to top!! I think I'll be baking them again tomorrow but this time, I'm doubling the recipe!

  104. Had to try these nummy looking brownies. But I think (actually I know) I made a mistake. First, I had to use the bottled lemon juice I already had on hand. I also had to use dehydrated lemon peel. (Did have any lemons.) I think it was a huge mistake. The brownies tasted bitter rather than sweet but lemony!

    I also sprayed the pan with Wilton's baking spray (made specifically for baked items) and the brownies stuck terribly bad. They broke apart completely.

    The bottom line is... I feel that if you follow the directions rather than veer off like I did, this is a fabulous recipe. I will try it again and use only the ingredients called for. But I think I will also line the pan with parchment paper.

  107. Just made these for the 4 teens at my house...loved them!! We thought they needed more Lemon. Sooo in the icing I added 2 packets of Tru Lemon & that perked it up. Next time might even add Lemon pudding into the batter. Great alternative to regular brownies :-)

  116. WOW are these delicious!! I love lemon and these are an instant favorite! When I make brownies I usually slighltly undercook them so that they are nice and soft even after they've cooled (I don't like the crunchy edge pieces of brownies). However I found when I did that to these they were a little too undercooked for this type of batter. My mistake of course, not a mistake with the directions, but now I know and if anyone else usually makes brownies like that just be aware this should be baked through evenly like a cake. I found that these lemonies are in an interesting place where they are not quite brownies, not quite cake, but I might love them better than either! Thanks for a delicious and EASY recipe :)

  120. Lemon is one of my favorite things. When I first saw this recipe it was on another blog. The picture was deep yellow and they looked about 1and1/2 inches thick. Wellllll, I made them today and they are no where near that color or thickness. They were very pale and very thin. They actually look more like these on your blog. I was so disappointed in them. They had a thin gel like texture on the bottom and sort of packy. The recipe I used is exactly like this one. I don't know what could have gone wrong.

    I have been cooking 50 years so it isn't like I am just starting out. Wish I knew what happened.

  130. I love these and so does my family. I have taken them to potluck dinners with friends and everyone seems to love them.. I wish they were thicker like some of the photos of this recipe I have seen.. I need to try to double the recipe in an 8x8 and adjust the cooking time... they are pretty thin made this way, but they are pretty rich so the thinness doesn't seem to matter that much. thank you for this yummy recipe!

  136. I tried these tonight to make for Teacher Appreciation week, and was so disappointed. I followed the recipe exactly, using the correct type of butter, flour, fresh lemons, etc. They came out only about 1/2 an inch thick in my 8 x 8 pan, and were rock hard. :(
