Here's a super easy crock pot dish.
It starts with two frozen chicken breasts.
Put all the ingredients in a crock pot.
Drain and rinse the beans.
Give it a stir and top with cream cheese.

Shred the chicken before serving.

Huge hit at our house! I even switched it up and put the mixture in soft shells....rolled them up, poured salsa on top, the shredded cheese to make enchiladas in the oven. My husband absolutely loved it!! And they are now our favorite "enchiladas". And easy for me cause it cooks I the crockpot all day until I stuff the soft shells! It's awesome!!!

ReplyDeleteGreat recipe. I did add pinto because I didn't have black beans and used fresh cubed chicken. I was able to reduce the cook time to 2 hours on high because of the cubed fresh chicken and it was perfect. First time I used cubed chicken and it was dry. This time I also thickened w/ a little cornstarch whisked in. This is a keeper for sure. Fabulous. Oh and we served it w/ tortilla scoop chips...and had a dinner dip. The kicker is we aren't "dip people". The great part is everyone, even my picky kids liked it! Super good! A+++
PS: I 'thought' about making it for a bbq today (4th of July) but we didn't want to share..lol...so I whipped up a pasta salad instead so we could keep the dip to ourselves!
ReplyDeleteI made this last night in Germany for all of my international friends. I used a smaller amount of cream cheese so it was thicker,added some green onion, peppers, and olives, and also a taco seasoning packet. It was perfect served on top of cheesey tortilla chips. Since I didn't have a crockpot, I just shredded the chicken beforehand, and combined everything in a pot to heat. It was delicious, and all my international friends want to come eat "American food" now :D

ReplyDeleteI made this last night and it was fantastic! I thought it had a little too much chili powder if I was making it for my mom to eat as well, but we really enjoyed it. Unfortunately, I realized this morning that I had forgotten to add the ranch seasoning package! That's what I get for having my 12 year-old son gathering recipe ingredients for me and not double-checking him! Knowing that, I bet this recipe would be over the top awesome! I ended up doing 3 chicken breasts instead of 2, and soooo glad I did because I can not get enough of the chicken! My chicken was thawed, not frozen and when i took them out to shred the chicken, the chicken just fell apart! The possibilities with this is endless. We used rice this time, I think maybe next time this will be perfect for burritos. Thanks so much for sharing, I WILL be making this often!

Just wondering if anybody had made this with velveeta added to it... Or should i leave well enough alone and make it as is? There is a restaurant in Austin that has Mag Mud... Which is queso with avacodo died up in it and black beans and tomato in it. I got it in my head that this is the same but with chicken in it!! ReplyDeleteI made this tonight! It was to die for!!! I added a twist on it though. I made this in the crockpot. I then took 2 green bell peppers and 2 red bell peppers chopped them in half & put them in the microwave for 30 seconds. I filled each pepper halfway with rice and then poured the chili over the rice. Topped the mixture w/ shredded Mexican cheese & baked for 25 minutes. These were the best stuffed peppers I have ever made.

ReplyDeleteThis is the best recipe EVER! I have made it once a week since finding it! I usually double the recipe since I have a large crock pot and we like leftovers. I change up the proportions though, using about 5-6 chicken breasts, 3 cans of tomatoes, 2 cans of corn, 1 can of beans, and 1.5 packages of cream cheese. I also like to add some garlic powder to the recipe for added flavor. When I use thawed chicken, I can cook the full doubled recipe on high for just 3 hours.

ReplyDeleteThis recipe is so awesome! I did change one thing-instead of regular Hidden Valley Ranch I used Hidden Valley Fiesta Ranch-OMGosh!! Just amazing!! If your local grocery store does not carry this variety ask the manager to order it. I have used this dip mix for years to make fiesta ranch dip (I add it to sour cream with a can of chopped green chilies and a small can of chopped black olives and people just flip for it!)

ReplyDeleteIt is very tasty but very rich. A bit too rich for me. My husband and brother in law really liked it but could not even finish one normal sized portion (and these are two guys over 6 feet with voracious appetites). I think next time I'll serve it with chips as a dip. Great flavors!

I used the new Philadelphia recipe cooking cream in Santa Fe and Hidden Valley even has a Santa Fe Ranch mix that I used last time! and when I ran out of chili powder I just used a package of chili mix I had on hand..turned out great that way too.

All ideas on how to eat it sounds great: as stuffed peppers topped with cheese, burrito filling, dip, over rice, etc. I may serve it up enchilada style with added shredded cheese. ReplyDeleteI make this recipe all the time. It is by far the best "pin" i have ever found. I use leftover chicken from tacos chopped up in tiny bite size pcs. Since my chicken is precooked i can take this from fridge to dinner in an hr since my crockpot is just reheating and melting the cheese! Fabulous for lunch the next day too!!

I cook the chicken, tomatoes, beans, and spices for 8 minutes on high, then let it "de-pressurize" on its own for a bit (10-15 minutes), then I release the rest of the pressure. I shred the chicken and add the cream cheese, give it all a good stir, and it it ready to eat!

Rita, I have made this recipe twice and both times I couldn't wait to eat - the wonderful aroma filled my home! I did alter the recipe somewhat by using only 4 ounces of cream cheese. Also, I didn't have the Rotel, so I chopped red, yellow and green peppers to add with a can of diced tomatoes! Delicious!

I followed the recipe exactly as is, except I added some freshly grated parmigiana on the top, fresh ground pepper, and a tiny bit of kosher salt - than I mixed it all in! After that I was reading about adding tortilla shells for added crunch. Well I instead made a bowl using tortilla wraps (mixed olive oil, lemon juice 2 tbsp, cayenne pepper 1 tsp - add more if you want spice, garlic salt 1tbsp) then I baked them at 375 for 20 minutes in the oven. Not only is this chili AMAZING, but the bowls were just so much fun.

ReplyDeleteI don't do the frozen or raw chocken...i just use leftovers from taco night...ground beef, pork, chicken ,beef....they all work great! Super fast since the meat os alreadh cooked. I put it on high...and its ready in 45 min.
This stuff is soooo good!! The only change I make is lessen the cumin as it can get really hot. Love it!

ReplyDeleteI made this today and the hubs and I loved it! My husband is really picky and he ate two and a half bowls! This is going to be in the rotation for a long time to come! I think I'll double it next time to have leftovers for lunch.
ReplyDeleteThis recipe is so good, and easy to make !! Can be used to bring to a party as a dip with tortillas, or served over rice as I do at home with crushed tortillas over the top. The only modifications that I made were to add fresh cilantro right in the crock pot rather than dried (really makes a big difference in flavor), added half a jar of my favorite salsa for some extra spice, and I also put in spanish rice (I usually use Uncle Ben's Ready Rice, which I microwave before adding - usually add in the last hour of cooking), and I typically serve it over spanish rice too. Thanks for this recipe. It is a family favorite!

ReplyDeleteI make this all the time and I use the canned chicken. It is already cooked, so it only takes about an hour in the crock pot to get everything good & hot melt the cream cheese. I use 2 large cans.

I made this about 6 months ago and while it was delicious, it was just too rich for a main dish. A double recipe is in the crockpot now for tonight's New Year's Eve party! I use Rotel tomatoes and green chile as I'm in the Southwest and we put green chile in EVERYTHING! I plan to serve straight from the crockpot as a dip.

ReplyDeleteMade this yesterday and there was nothing left. I followed the recipe, but used 3 chicken breasts instead of two. Since I was shorter on time, I cooked it on high for the first two hours, then turned it down to low for 2 hours. I shredded the chicken with about an hour to go and, at the end, I used some corn starch to thicken the liquid a bit.

I am making this for the second time tonight since we have several friends joining us for dinner. The first time I made it was nothing short of a success. My husband went back for not just seconds, but thirds as well! This recipe will definitely be my new go-to crowd pleaser! Thanks!

ReplyDeleteI found this on pinterest and made it yesterday. It is fantastic! I just ate with tortilla chips. It was a bit spicy for my breastfeeding diet but any other time I would love how deceptively spicy it is!
ReplyDeleteI made this Sunday and it was terrific! I thought the measurements for cumin and chili powder looked reversed, but I did mine as stated and it was delicious. (I've seen this same recipe on another site where it's 1 T chili powder and 1 tsp. cumin.) I didn't have rotel, so I put that same amount of salsa, and I also only had 4 oz. light cream cheese - so that's what I used. Still amazing! I'll be making this again!
ReplyDeleteI made this recipe yesterday afternoon and it was absolutely outstanding! We have a family of six, so I put in 4 thawed chicken breasts and two cans of black beans. Other than that I did not change the recipe and we all loved it! I only cook a meal one day a week and this is a MUST!

I have made this several times, but never left any feedback. This is so good! My husband loves hot stuff so I added a small can of chopped green chiles and used hot rotel tomatoes. I used black bean soup instead of regular black beans and I didn't drain them. I also added some fresh garlic. It's delicious.

I usually always end up adding a bit of chicken broth at the end to thin it a little but I get rave reviews from EVERYONE! Thanks so much for this recipe. It will stay in rotation forever!

ReplyDeleteRita this is just the BEST White Chili I've ever had. My daughter found you 1st and made this as an evening meal when I was visiting overnight. OMG.. I thought I'd died and gone to Heaven. DELICIOUS. I've since made it just for me, as it freezes well. AND taken it to a church potluck where it went fast. It's become a staple recipe in our whole family now

Good recipe. I did not use frozen chicken though because it is not safe to cook frozen meats in a slow cooker. It worked just fine.
ReplyDeleteI made this today! I used all organic ingredients and swapped the cream cheese for half fat free cream cheese and half nonfat plain greek yogurt. Served it over quinoa and it was delicious! I will definitely be making this again, so quick and easy, perfect for a college student

I'm making yellow rice to pair it with and my husband wants to eat it with tortilla shells. The only thing I did differently was half the cumin and half the chili powder. I didn't want it too spicy. Just put all ingredients in the crockpot as described in your recipe. My chicken breasts were not frozen, so I cubed them. Wondering if I should cook on low as described or on high for a shorter time. If you see this message, I hope to hear from you. Thanks
ReplyDeleteI hope it turned out OK. If your chicken breasts are unfrozen, just cook for less time on low, about 3-4 hours. Everything else is cooked, so your chicken should be done by them.

ReplyDeleteI've never tried that. Since it's just a matter of opening cans and dumping in the pot, anyone can easily do that for you. Have all the spices pre-measured in a small container and it's ready to go. You relax! Happy new baby!
ReplyDeleteI just put my version of this into the crock pot. I was going to use frozen corn, but we had a can of creamed corn, so I went that route. It's pretty thick because of that, and i'm worried it might need a little more water. Will check in the morning before I put it on. Although we plan to eat it as is, I think it would be delicious rolled up in tortillas in a baked chimichanga sort of way. Mmm!

Any advice on making this for a large group? Should I just double or triple all of the ingredients? OR, should only some of the ingredients be multiplied. Please let me know what to hold back on. I know I want to put a lot more chicken in it. Thanks to anyone who can advise me on this.

I'd like to add a follow up, I never make this using frozen chicken breasts. They are always straight from the fridge, and I tend to cook it for 8 hours ( usually set it up and go to work ), there have been no issues and the chicken is still moist and delicious! I shread mine and put it back into the pot for about an hour to let everything soak up together, and we serve it over low sodium Fritos ( less salty ). It's great!

I've made this before and everyone loved it! I can't remember and I can't tell up top in the ingredient list...is it tabelspoons or teaspoons for the seasoning and spices?
