Spinach Casserole

I love spinach, This casserole is a favorite because you can put it together ahead of time and it's a side dish that goes with anything, steaks, roasts, chicken. I love leftovers for lunch the next day. It's like a quiche without the crust.
Easy to mix together.
Cook onion in butter in microwave.
Combine ingredients.
Combine melted butter and breadcrumbs.
                                                Spread on top and bake.
Cut and serve. You can also make this in a square, oval or rectangular pan.

Spinach Casserole
2 packages frozen chopped spinach, thawed and drained
2 eggs
1/2 stick butter
1/2 C chopped onion
1/2 t salt
1/8 t pepper

1/2 C shredded cheddar cheese
topping: 1/4 C breadcrumbs
              2T butter, melted

Squeeze excess water from the spinach. Combine butter and onion in large bowl and microwave about 2 or 3 minutes until the onion is tender. Stir in spinach, mix in eggs, seasonings, soup and cheese.
