Spinach Casserole

I love spinach, This casserole is a favorite because you can put it together ahead of time and it's a side dish that goes with anything, steaks, roasts, chicken. I love leftovers for lunch the next day. It's like a quiche without the crust.
Easy to mix together.
Ingredients
Cook onion in butter in microwave.
Combine ingredients.
Combine melted butter and breadcrumbs.
                                                Spread on top and bake.
Cut and serve. You can also make this in a square, oval or rectangular pan.

Spinach Casserole
2 packages frozen chopped spinach, thawed and drained
2 eggs
1/2 stick butter
1/2 C chopped onion
1/2 t salt
1/8 t pepper
1/8 t nutmeg
1 can cream of mushroom (or celery) soup
1/2 C shredded cheddar cheese
topping: 1/4 C breadcrumbs
              2T butter, melted

Squeeze excess water from the spinach. Combine butter and onion in large bowl and microwave about 2 or 3 minutes until the onion is tender. Stir in spinach, mix in eggs, seasonings, soup and cheese. Combine well and pour into a buttered casserole or deep 9" pie dish. Combine topping mix and sprinkle on top. Cover and refrigerate at this point or bake now at 350 for 30-40 minutes until slightly puffed.
6 servings.

  1. Hello! The Spinach casserole looks yummy! My husband and I like Spinach dip, and that is all he will eat made with Spinach. I will have to try this, it looks good. Maybe I will cook this and put it on the table and they would taste it. I did get hubby to taste broccoli and there was that face of don't give me that again. I will try this. Thanks for the recipe.
