Crock Pot Cream Cheese Chicken Chile

Here's a super easy crock pot dish.
It starts with  two frozen chicken breasts.
Put all the ingredients in a crock pot.
Drain and rinse the beans.
Give it a stir and top with cream cheese.
Cook on low for 6-8 hours.
If you're home stir after 2 or 3 hours to blend
in the cheese. Or just stir when you get the chance.
Shred the chicken before serving.
Serve over rice.
Some chopped cilantro would be nice.

Crock Pot Cream Cheese Chicken Chili
(that's a mouthful!)
2 chicken breasts, still frozen
1 can Rotel tomatoes
1 can corn kernels, do not drain
1 can black beans, drained and rinsed
1 pkg. Ranch dressing mix
1 T cumin
1 t chili powder
1 t onion powder
1 8-oz pkg. cream cheese
_________
Put the chicken in the crock pot.
Top with the tomatoes, corn, drained and rinsed beans,
ranch dressing, cumin, onion and chili powders,
stir to combine then top with the cream cheese.
Cook on low for 6-8 hours, stirring one or twice
 to blend in the cheese.
Shred the chicken into large pieces
and serve over rice.
Serves 4
(This would also make an excellent dip!)

Enjoy!

This sounds good! My hubby is not a huge chicken eater, but I showed him this picture and he even said it looked good! I have most of the ingredients on hand, so I believe I'll be trying this one maybe tomorrow! Thanks for the recipe!

Hi Rita,
I made your recipe for crockpot pot roast and it was so good!!! Hubby loved it!
I know I said I was having the Chicken Chile for tonight, but we're having it for tomorrow night's dinner instead. It's already made though. All Hubby has to do is make the white rice and heat up the chile...and voila...dinner is served. TFS

Does the chicken have to be frozen ? If not how long should it take to cook?

Oh my gosh, this was so delicious and EASY! I don't think I've ever gotten ALL rave reviews on a meal before from my family! (Especially one where I didn't even have to work hard!) Thank you!

Our crockpot is broken, so I just made it in the oven hoping it would be ok. It was! Next time I have to lighten up on the chili powder because my family can't handle much heat, but otherwise...YUM!

Huge hit at our house! I even switched it up and put the mixture in soft shells....rolled them up, poured salsa on top, the shredded cheese to make enchiladas in the oven. My husband absolutely loved it!! And they are now our favorite "enchiladas". And easy for me cause it cooks I the crockpot all day until I stuff the soft shells! It's awesome!!!
